Heat olive oil in skillet or wok over medium high heat.
Add garlic to skillet and cook for 1 - 2 minutes so that it browns.
Next, add sliced pork to skillet. Cook through and remove from skillet. Set aside.
Add onions, mushrooms, carrots, and peppers to skillet. Cook for 3-4 minutes.
Next, add broccoli to skillet and continue to cook for 5 minutes so that the broccoli cooks, but is still crispy.
Once veggies are cooked, turn heat to medium. Add in soy sauce and ginger and mix well. Cook for another 1-2 minutes.
Add pork back to skillet and mix together.
Top pork stir fry with oyster sauce and mix up. If not ready to serve immediately, turn heat to very low so that the food doesn't over cook.
Serve over rice.
