- 2 lbs Boneless Chicken I prefer Chicken Breast, but Thighs are good too
- 1 jar Salsa Whatever your favorite is! (small jar is best)
- 1 can Corn Fire roasted is great. You can also do a small bag of frozen corn.
- 1 can Black Beans
Cowboy Chicken Seasoning
- 1/2 - 1 tsp Chili Powder Depends on your heat preference
- 1 tsp Cumin
- 1 tsp Cilantro
- 1 tsp Garlic Powder
Making Cowboy Chicken Season
Put all seasoning ingredients in a small bowl and mix well.
Cut the fat off the chicken and then put in the crockpot.
Top the chicken with the seasoning.
Empty the jar of salsa in the crockpot.
Drain corn and dump over chicken.
Cover and cook on low for 4 hours.
Drain and rinse black beans thoroughly. Then dump into crockpot.
Cover and cook for an additional 1-2 hours.
Serve over rice and top with your favorite toppings; sour cream, greek yogurt, cheese, guacamole, etc.
