In a large skillet, heat olive oil over medium high heat.
Add garlic and cook for 1 minute.
Add Ground Turkey and cook through til browned (approx 7-8 minutes)
Add cumin, chili powder, salt, and pepper. Stirring well to incorporate.
Next, mix onion and pre-cooked carrots and cook for approx 3-4 minutes.
Then add the pre-cooked sweet potatoes to the mixture and incorporate well.
Top with shredded mozzarella and let it melt.
Remove from heat.
Serve with sour cream or yogurt and/or cilantro - ENJOY!
