Cowboy Casserole
Cowboy Casserole is an awesome way to eat a bacon cheeseburger and still get your veggies! It's loaded with flavor and a family favorite.

- 2 lbs Ground Beef
- 1 pkg Onion Soup Mix dry
- 1 can Cream of Bacon Soup
- 1 can Cream of Mushroom Soup I use healthy choice (you can't tell the difference)
- 1 cup String Beans
- 1 can Corn
- 1 cup Carrots chopped
- 1 cup Cheddar Cheese shredded
- 1 pkg Tater Tots
Preheat oven to 375 degrees F.
Cook the ground beef and drain.
Add onion soup, cream of bacon, cream of mushroom, and veggies. Mix well.
Put beef mixture in casserole pan, spreading it evenly.
Put cheese on top of the beef mixture. Add more, if you like extra cheesy!
Place the tater tots on top of the cheese layer.
Bake for 40-50 minutes. You will see the beef mixture starting to bubble, when done.
Let sit for 5 minutes (it will be really hot).
