Lemon Butter Chicken Pasta

Lemon Butter Chicken Pasta is an easy dinner recipe. After making this chicken dinner, I’m sure it will become a family favorite dinner. I’ve never met anyone who dislikes pasta. I mean, come on, it’s the reason Italian food is so great. Am I right? Additionally, beyond liking pasta, this easy to make dinner takes under 30 minutes to cook. Under 30 minutes! And it tastes like something you would get at a nice restaurant. I love recipes like that! You can make it yourself (save $$) and look like a professional chef to your family. Isn’t it great to get compliments on your cooking? Not to mention, the love you feel when compliments come from your picky eaters!

Easy Dinner Recipe

As far as difficulty goes, this Lemon Butter Chicken Pasta is EASY. You don’t need to be formally trained in culinary arts to make this pasta dish a masterpiece. Seriously. If you can follow directions, you can make your family a yummy dinner on any given day.

To make this pasta favorite, season the chicken with salt and pepper and cook each side until it’s fully cooked. Set the chicken aside. Next, you will get to work on the lemon butter sauce. Mmm, doesn’t that sound amazingly delicious? Then, heat some butter add some garlic (or a lot of garlic, you can’t overdo garlic, lol!), lemons, lemon juice, and lemon zest as well as a little crushed red pepper (if you like your food spicy, add more). Let that simmer for a bit, add some pasta water and you are basically done!

If you are like me and like extra sauce, you might want to increase the sauce. Don’t worry, you don’t have to decide this before you start making the sauce. Increasing your sauce is easy. Just add additional pasta water. Taste it as you do this. If the sauce tastes a little on the bland side, add a pat of butter and a little more lemon juice and/or some salt. You will get the perfect combination, I’m confident you can do this!

Ingredients Needed

  • 2 lbs Chicken I prefer chicken breasts, but any boneless chicken works
  • 2 tbsp Olive Oil
  • Salt to taste
  • 2 tbsp Garlic minced
  • 1/3 cup Butter
  • 1/4 cup Parmesan Cheese
  • 1/2 cup Lemon Juice
  • Lemon Zest of one lemon
  • 4 Lemons sliced
  • 2 dashes Crushed Red Pepper
  • 8 oz Spinach
  • 1 box Spaghetti or any pasta!

Lemon Butter Chicken Pasta is one of my family’s favorite meals! As a matter of fact, wehenever they find out that I’m making this for dinner, they all scream with excitement. For real! They really do that. The lemony flavor with the sweet buttery sauce is something everyone loves.

Cook this dish with boneless chicken for the best results. This cooks quicker than split breast chicken and quicker is better for busy moms! Also, most people enjoy the taste of moist chicken without having to eat around pesky bones! This lemon butter chicken pasta recipe does contain spinach. For the non-spinach lovers, this might be your favorite way of ‘getting it down’ with the yummy sauce on it! You won’t even know you are eating something healthy. Not only do the lemons and spinach give this amazing pasta dish beautiful colors, they come together exquisitely. Your taste buds will be in awe! And your family will be in awe as well!

Lemon Butter Chicken Pasta

Delicious Lemon Butter Chicken Pasta is easy to make!

Ingredients

  • 2 lbs Chicken I prefer chicken breasts, but any boneless chicken works
  • 2 tbsp Olive Oil
  • Salt to taste
  • 2 tbsp Garlic minced
  • 1/3 cup Butter
  • 1/4 cup Parmesan Cheese
  • 1/2 cup Lemon Juice
  • Lemon Zest of one lemon
  • 4 Lemons sliced
  • 2 dashes Crushed Red Pepper
  • 8 oz Spinach
  • 1 box Spaghetti or any pasta!

Instructions

  • In a large skillet over medium heat, heat olive oil. Add chicken and season generously with salt and pepper. Cook until no longer pink, 10 minutes per side.
  • While chicken is cooking, bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain, reserving 1 cup pasta water, and set aside.
  • Transfer chicken to a plate.
  • Add butter to skillet and let it melt.
  • Next, add garlic. Cook, stirring occasionally, until soft.
  • Then add lemon juice, zest, and slices. Stir in crushed red pepper flakes. Pour in 1/4 cup reserved water.
  • Return chicken to skillet, along with spinach. Gently toss until wilted, 1 to 2 minutes.
  • Salt to taste.
  • Add pasta and toss until combined. (Add more pasta water and/or butter if desired.)
  • Top with Parmesan.
  • ENJOY!
