Shrimp & Asparagus Scampi An Easy And Delicious Dinner

Shrimp & Asparagus Scampi is my personal version of shrimp scampi. If you have never had or heard of shrimp scampi, you need to listen up! It’s delicious! Well, if you aren’t a fan of shrimp, you probably wouldn’t enjoy this Italian pasta dish. However, if you do like to eat shrimp, you will probably LOVE this yummy dinner!

Shrimp Scampi

Shrimp scampi is typically a garlic and oil sauce that is seasoned with garlic, butter, and white wine. Of course, it consists of shrimp and is served with pasta; typically a noodle pasta like spaghetti, angel hair, or fettuccini. Just describing this dish is making my mouth water. I love twirling the pasta with my fork, using the spoon for leverage so that I can get that perfect bite every time! Yum!!

I love typical shrimp scampi, it’s hard not to love a wine sauce with butter and garlic. I am Italian, after all. It’s vital for my existence to have garlic on a regular basis! However, when I make scampi, I like adding extras to it so that it seems like a more complete meal with vegetables. Therefore, I make shrimp and asparagus scampi. I love adding grape tomatoes to garlic and oil sauces as well so this yummy dinner consists of asparagus and tomatoes in addition to the shrimp and pasta. How is that for a complete meal? Pretty tasty, if you ask me!

Ingredients Needed

This amazingly delicious shrimp and asparagus scampi does not require many ingredients. It is really easy to make and just needs the basics. As you can see, this is all you will need:

  • 2 tbsp Olive Oil
  • 2 tbsp Garlic minced
  • 1 bunch Asparagus cut into 3 pieces for each stalk
  • 1 pint Cherry Tomatoes
  • 2 lbs Shrimp pre-cooked
  • 3 tbsp Butter
  • 1 cup White Wine
  • Salt to taste
  • Pepper to taste
  • Parsley garnish/taste
  • 1 lb Pasta any spaghetti or pasta will work

How Do You Cook Shrimp Scampi?

For such an elegant looking dinner, cooking this culinary masterpiece is as easy as cooking home made burgers on the grill. Seems like a strange comparison, but seriously when you make your own burgers, usually you season the hamburg, divide up the meat, and form the patties. Then you put the burgers on the grill and let them cook. A little while later, flip them and repeat the cooking time. Basically, you do a few steps and everything comes together quickly. It’s a pretty easy dinner. This shrimp and asparagus scampi is pretty has a few steps to follow and is easy too!

Before starting the scampi sauce, you want to boil the water for pasta. Since there is barely any prep work for this dish and cooking the pasta takes the longest, start cooking the pasta as soon as possible. Once that is going, move on to the goodness of this dish – the sauce!

Start out by heating some extra virgin olive oil in a large pan. Once the oil is hot, add some garlic and let that sizzle for 1 to 2 minutes. The smell of garlic sauteing is amazing! The yummy aroma fills up the kitchen instantly and everyone will be wondering what you are making tonight. Once the garlic has a golden brown color, add asparagus and tomatoes to the pan. Cook them for approximately 5 to 6 minutes, until the tomatoes start to look a little wilted. Then, add the shrimp to the pan and mix everything around. Now add the butter and let it melt into everything. Continue to mix everything together. After that, add the white wine to your creation, cover, and cook for another 5 minutes so the wine reduces and incorporates that sweet taste into your scampi sauce. Finally, add in your pasta and swirl it around the sauce to get it mixed evenly. Voila, your shrimp & asparagus scampi is ready to eat!

Shrimp & Asparagus Scampi might not be a meal that you make on a regular basis because of the price tag of shrimp. However, if you are lucky enough to afford this yummy shellfish regularly, you will be happy to know that this elegant dinner is easy dinner to make. Not only is it easy to cook, but it cooks in less time than some average dinners such as goulash.

If you are like me and love the taste of shrimp, but can’t justify the price all the time, this is a great dinner to make from time to time. In my family of 8 people, it doesn’t make sense to eat seafood all the time, but we do love it. The shrimp & asparagus scampi is a nice splurge every once in a while! And it’s a lot cheaper to make this dinner at home than to eat it in a restaurant. That will make you feel a lot better when you pay for that pricey shrimp!

Shrimp & Asparagus Scampi

Deliciously easy to make Shrimp and Asparagus Scampi.

Ingredients

  • 2 tbsp Olive Oil
  • 2 tbsp Garlic minced
  • 1 bunch Asparagus cut into 3 pieces for each stalk

Instructions

Cooking the Pasta

  • Fill pasta pot 2/3 with water. Bring to a boil.
  • Once water is boiling, add the pasta to the pot and cook for 7-8 minutes.
  • Drain water from pasta and add to sauce pan.

Cooking the Scampi Sauce

  • Heat Oil in large pan over medium heat.
  • Add garlic to pan and cook for 1-2 minutes so that it gets brown.
  • Now, add asparagus and tomatoes to pan. Let cook for 5-6 minutes. Tomatoes should start to look a little wilted.
  • Then, add shrimp to pan and mix everything around. Also, add butter and let it melt.
  • Next, add wine to the pan. Cover and cook for 5 minutes.
  • Add the pasta to the pan and mix well.
  • Once mixed thoroughly, add salt and pepper to taste.
  • Top with parsley and serve.
