Sausage Hash Brown Casserole

Sausage Hash Brown Casserole is a hearty breakfast recipe that is easy to make. Your entire family will enjoy this homemade breakfast casserole. And if you are like me, you will enjoy making this delicious casserole as opposed to making a dozen eggs or 30+ pancakes! Rather, you can whip up this breakfast all at once and you might even have leftovers!

Homemade Breakfast

During the week, I don’t have time to cook breakfast. I would much rather skip breakfast in order to gain 5 minutes of sleep! And once I’m up, it’s go, go, go – all day long! Between getting kids off to school, work, prepping dinner, doing all the household things, and then chauffeuring kids to and from activities, I need every minute of sleep I can get. Therefore during the week, breakfast is a meal that needs to be easy enough that I don’t have to cook it!

However, that doesn’t mean I won’t ever make breakfast. That’s what weekends and special occasions are for! Hot breakfasts are something I try to cook once a week. Eggs over toast is a family favorite and it’s easy so that is my go-to breakfast. The best way to keep a favorite meal a favorite meal is to serve other tasty dishes in between. After all, the more you eat something, the more likely it will become boring and overrated.

Cooking tasty breakfast recipes like this Sausage Hash Brown Casserole is a way to remind my family there is more to breakfast dishes than scrambled eggs and bacon. And while this isn’t a huge stretch from eggs and bacon (it still has eggs and pork, aka breakfast sausage), it is a completely dish overall. And the taste? The taste is AMAZING!

Make Ahead Breakfast Casseroles

I love making breakfast casseroles for a variety of reasons. My top 2 reasons are that they serve a lot of people which is great for my family of 8…yes, eight! The other reason I love breakfast casseroles is because they are filling. Which is great since I have a family of 8 hungry people who seem to be hungry all-the-time!

What I don’t love so much about breakfast casseroles is that they take a while to cook. It only makes sense that a large pan of food would take longer to cook than a fried egg, right? I appreciate that, but it’s hard to find time to make a yummy breakfast, when everyone wakes up so early and immediately wants to eat!

The great thing about this sausage hash brown casserole is that you can prepare it ahead of time. Meaning, you can cook the breakfast sausage and then put the casserole together the night before. Therefore, the next morning, you just preheat the oven and then pop the casserole in once it’s ready to go. It saves time – albeit not the full amount of time, but saving time is worth celebrating nonetheless!

Ingredients

  • 1 lb Breakfast Sausage
  • 2 cups Chedder Cheese
  • 1 pkg Hash Browns Frozen, shredded hash browns or patties that are thawed and crumbled up
  • 8 Eggs
  • 2 cups Milk
  • 1/4 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Preheat oven to 375 and spray 9 x 13 pan with non stick cooking spray.
  • Brown sausage in skillet, over medium heat, breaking into small pieces.
  • Don’t drain grease (unless you prefer to make this a bit healthier). I like the extra flavor that the sausage juice provides. Set aside.
  • Whisk eggs, mix, and all spices together. 
  • Layer ingredients in a casserole dish. Start with thawed hash browns, cooked sausage, cheese. The pour whisked egg mixture.
  • Cover with foil. Bake for 40 minutes, remove foil, and then bake for another 20.
  • Let cool for 10 – 15 minutes (the middle pieces will be very hot!)
