Crock Pot Cowboy Chicken. If you have never heard of Cowboy Caviar, you are probably thinking, what the heck is it? Cowboy Caviar is a dip that consists of peppers, onions, tomatoes, beans, seasonings, and a lite dressing. It is so good and healthy for you. Although Crock Pot Cowboy Chicken isn’t exactly the same as Cowboy Caviar, it’s pretty similar.
Crock Pot Cowboy Chicken consists of healthy ingredients like veggies and beans, and chicken – of course, as well as some flavorful seasonings. It cooks slow so that they meat cooks thoroughly, but remains juicy. It is a healthy dish so you don’t have to feel guilty pigging out on this yummy meal. You can eat it for lunch, dinner, or even as a snack in between meals.

If you have read any of my recipes, you know that I am all about simplicity, when it comes to cooking. The meals I make are super easy to make and this dinner is no exception! Of course, you should also know that not only do I want easy recipes, I do want to eat delicious food! Many people think you can’t have easy and delicious. However, I am here to show you how you can have both!
For this yummy crock pot cowboy chicken, you start out by mixing a few seasonings then dump the ingredients in the crock pot. The crock pot will take care of the rest so you can do what you need to do. And then later on, voila, dinner will be ready!

Cowboy Chicken Ingredients
- 2 lbs Boneless Chicken I prefer Chicken Breast, but Thighs are good too
- 1 jar Salsa Whatever your favorite is! (small jar is best)
- 1 can Corn Fire roasted is great. You can also do a small bag of frozen corn.
- 1 can Black Beans
Cowboy Chicken Seasoning
- 1/2 – 1 tsp Chili Powder Depends on your heat preference
- 1 tsp Cumin
- 1-1.5 tsp Cilantro
- 1 tsp Garlic Powder
Instructions
Making Cowboy Chicken
- Put all seasoning ingredients in a small bowl and mix well.
- Cut the fat off the chicken and then put in the crockpot.
- Top the chicken with the seasoning.
- Empty the jar of salsa in the crockpot.
- Drain corn and dump over chicken.
- Cover and cook on low for 4 hours.
- Drain and rinse black beans thoroughly, then dump into crockpot.
- Cover and cook for an additional 1-2 hours.
- Serve over rice and top with your favorite toppings; sour cream, greek yogurt, cheese, guacamole, etc.
For this Mexican inspired crock pot chicken dinner, you can follow my recipe exactly as written or you can use it as inspiration and come up with your own delicious concoction. Since my recipe is on hand, let’s go over what you will need to get started.
For the crock pot cowboy chicken, it’s obvious that you will need chicken. From there, you will need corn (canned or frozen), black beans, salsa (your favorite salsa would be an amazing choice!), and then some go-to Mexican seasons such as cumin, garlic powder, chili pepper, and cilantro. If you wanted, you could always buy a pre-made fajita or taco seasoning package and use that instead. Personally, I prefer to make my own because it can be tweaked with what you like the best and it is a lot cheaper! Cheap, easy, and delicious – best way to be as far as cooking goes!

Easy & Healthy Family Dinner
As easy as this recipe is to make, it is loved by everyone in my family. Seriously, everyone. And I have a few picky eaters in my crew and even they love it! They eat so much at dinner, when I make this. It’s astonishing actually! In order to stretch the meal further, sometimes I add cooked rice to the crock pot (after the crock pot cowboy chicken is cooked) so that they get fuller before they go for their 5th taco! Sometimes it helps, sometimes they just can’t help themselves and continue to eat, eat, eat!
